Pork Adobo

This is one of those Filipino delights that many American visitors really enjoy.  The only difference in my recipe is that I do not include monosodium glutamate (for health reasons).

2 lbs. pork butt, cut into 1-inch cubes

½ cup vinegar

1 cup water

2 tablespoons soy sauce

4 cloves garlic, crushed

2 tablespoons vegetable oil

Salt, black pepper to taste

1.      Combine pork, vinegar, water, garlic, soy sauce, salt, and black pepper in a saucepan.

2.      Cover and cook over low heat until all the liquid evaporates.

3.      Add oil.  Brown the meat slightly.
