Salsa

(This was given to me by my mother-in-law.  It's a great way to use up all those extra tomatoes from the garden!)


2  ice cream buckets full of peeled and cut-up tomatoes
6  large onions, cut up
1/2 cup salt

Pour over tomatoes and let sit overnight


Next day:

1   4 oz. can chopped jalapeno peppers
1   4 oz. can chilis, chopped
1   c. sugar
1   c. vinegar ( light or dark)
1   12 oz. can tomato paste
1   whole stalk celery, chopped

Boil about 25-30 minutes to judge for thickness, stirring occasionally. Put in jars and seal.  Can be processed for 20 minutes in boiling water, but is not necessary.

You can cut this recipe in half if you don't have enough tomatoes.
